FOOD PLANNING

Survival for the working mom

We’ve all been there…  You come home from a long day of work kiss the kids hug the hubby and then go into a craZy fuss trying to pull a suitable dinner out of your butt. Dinner as it is is such a balancing act I need it to be nutritious for my little one, a large meal for my husband who needs the calories to fuel his workouts, and it also needs to be light in calories for me to support my weight loss.  Then add that I have to have it set on the table the instant I get home makes dinner an impossible feat.

Enter my heroic team Meal Planning and Crockpot... I finally got it!  Now I prep our meals in advance using plastic gallon bags.  I double the recipes and put one in the freezer for future use and one in the fridge staged for cooking.  In the morning I will put the fridge bag into the crockpot add any additional ingredients and set the magic nob.  Dadada come home from work and boom dinner is ready to go!!  I have enough time now to give my kid and hubby BOTH a kiss and a hug.  Yay!  Also once we finish the dinner there is always enough for lunch the following day.

I love this new routine!! Dinners premade…Dinners in the freezer for those back up days when we don’t have anything planned… and lunch meals make themselves.  Not only am I saving time but also saving money!

So here is a rundown of the meals for this week…
